These are. Quite possibly. The best cookies I’ve ever made. Which is reassuring since right before this I baked the worst fail recipe ever so it all balances out I guess? Chocolate almond SHORTBREAD cookies. The best shortbread texture. ANYWAYSSSS. Expect more baking from me now that I have more time to focus on it!!!
Chocolate Almond Shortbread Cookies
Makes: 7 cookies
- 1/4 cup coconut flour
- 1/3 cup almond meal
- 1.5 scoops vanilla whey protein (45 g)
- 1/4 cup unsweetened almond milk
- 2 TBSP melted coconut oil
- 1/2 tsp baking powder
- 1/4 tsp almond extract
- 2 stevia packets
- 7 chocolate covered almonds
In a bowl, mix your ingredients except for the almonds! It helps to mix the dry first, then add wet ingredients. Spray a pan with nonstick spray and roll your batter into 7 dough balls. Lightly flatten on the pan. Crush the almonds on top of the cookies. Bake at 375 for 8-10 mins, until lightly brown. EAAAAAT.

hi kim, I was refer ed to your blog by Gretchen(Gretchen bakery) my niece was diagnosed with leukemia recently and she a cookie addict. Now that she cant take wheat, sugar and dairy, i was wondering if you can help, if you have any cookies or cake without those ingredients. thanks
Hey Jue! Any recipe on my blog will be sugar free – so that’s easy to knock out. :) A lot of my earlier recipes contain dairy from whey protein, but most do not any more (most recent posts). Anything labelled vegan/gluten free on my site is probably a good bet for her! If you search the term “vegan” maybe something she would like will pop up!
