Rule number 1: ice cream is always a great addition. Rule number 2: cookies. Just, cookies. Best part is this is all healthy HAYYYY. Today I made chocolate almond cookies and sandwiched two with some healthy chocolate Halo Top Creamery ice cream. Then I drizzled Rawmio Almond Silk on top (this stuff is so freaking heavenly I chug it). These cookies smelled like brownies as they baked it was divineeeee. Should probably be called brownie cookies but iono.
Makes: 12 cookies
- 1 cup almond meal/flour
- 1/3 cup almond butter
- 1/3 cup unsweetened cocoa powder
- 1/4 cup stevia
- 2 egg whites
- 2 tsp vanilla extract
- 1/2 tsp baking powder
Mix all of your ingredients in a bowl. Once evenly mixed, roll into 12 balls, lightly pressing each onto a sprayed baking sheet. Bake at 350 F for 7-9 minutes.
Eat. All of them. Jk. I think.
