Chicken and Cinnamon Chili Maple Waffles

I was craving chicken and waffles (a very southern meal) real bad all week so I took the extra time Saturday morning to make some! It’s a weird combination when you first hear it, but when you try it, it’s sooo good.

Serves: 1

  • 1/4 cup raw old fashioned oats
  • 2 TBSP ground flax
  • 2 TBSP coconut flour
  • 3 egg whites
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp maple extract
  • 1/2 tsp chili powder
  • 1/2 tsp cinnamon
  • 1/4 tsp paprika
  • 1 stevia packet

First grind the oats into a flour. Then add the remaining ingredients and blend again. Cook in a sprayed waffle maker!

I baked chicken in the oven at 350F for 25 minutes with chili powder, paprika, and onion powder.

And on top of everything I poured a maple chili cream (2 TBSP plain Greek yogurt, 1.5 TBSP sugar free syrup, and 1/8 tsp chili powder). Filling and fulfilling!!

    I don’t like Stevia, can I use raw honey or maple syrup? Im going to try this recipe. I’ll let you know how it comes out.
