I love how using nutritional yeast adds a cheesy flavor to things! This panini is basically just a summation of EVERYTHING I’ve been obsessed with lately. Cod. Fresh basil. Paninis in general. Yummmmm.
“Cheesy” Cod Panini
- 4 oz cod
- 2 oz mushrooms (~2/3 cup raw)
- Large la tortilla factory low carb tortilla
- 5-6 fresh basil leaves
- 2 TBSP lowfat cottage cheese
- 1 TBSP nutritional yeast
Cook the cod and mushrooms in a pan sprayed with nonstick spray over a medium heat until the mushrooms are soft and the cod can flake easily. Put it all on a large la tortilla factory low carb tortilla. Mix the cottage cheese and nutritional yeast; put this on top on the cod and mushrooms, along with the basil leaves. Fold everything closed and put it in a panini press until lightly browned.
