Carrot Cake Overnight Oats

So I’ve got a carrot cake oatmeal recipe, a carrot cake egg white oatmeal recipe, and now carrot cake overnight oats! Take your pick!

Serves: 1

  • 1/2 TBSP chia seeds
  • 1/2 cup raw old fashioned rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 cup plain Greek yogurt
  • 1 TBSP chopped pecans
  • 1/4 cup shredded carrot
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ginger
  • 1 stevia packet

Mix all of the ingredients in a bowl with a spoon. Let sit in the fridge overnight so the chia seeds plump up. Top in the morning with more pecans, shredded carrot, some raisins, and/or sugar free syrup. Whatever floats your boat! Eat cold :)
