I made some oats this morning to have after my workout that ended up really good and I thought others would be interested in making this! Carrot Caaaaaaakee
- 1/2 cup old fashioned oats
- 3/4 cup water
- 3 TBSP carrot puree (I use baby food)
- 1-2 TBSP shredded carrot
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- Stevia (Optional)
- 1 egg white
Mix all of the ingredients in a bowl except for the egg white. Microwave for 2 minutes. Then stir in the egg white and microwave another 30-90 seconds, stirring every 20 seconds until the egg is cooked. You have to stir in intervals or else the egg will cook in clumps, which isn’t as appetizing…. Anyways. I topped mine with more cinnamon, raisins, Better’n Peanut Butter, and a tablespoon of sugar free syrup. Pecans and/or walnuts would also be PERFECT with it!
