Carrot Cake Egg White Oatmeal

I made some oats this morning to have after my workout that ended up really good and I thought others would be interested in making this! Carrot Caaaaaaakee

Serves: 1

  • 1/2 cup old fashioned oats
  • 3/4 cup water
  • 3 TBSP carrot puree (I use baby food)
  • 1-2 TBSP shredded carrot
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Stevia (Optional)
  • 1 egg white

Mix all of the ingredients in a bowl except for the egg white. Microwave for 2 minutes. Then stir in the egg white and microwave another 30-90 seconds, stirring every 20 seconds until the egg is cooked. You have to stir in intervals or else the egg will cook in clumps, which isn’t as appetizing…. Anyways. I topped mine with more cinnamon, raisins, Better’n Peanut Butter, and a tablespoon of sugar free syrup. Pecans and/or walnuts would also be PERFECT with it!

    I’m so glad I just found your web site – you have recipes right up my alley! Baby food is great to cook with – I came up with a plum and banana/orange spice cake with almond flour using baby foods and it is so very good. I’ve been wondering how I could use the carrots or sweet potatoes. I love carrot cake so I expect to like this a lot!
