Serves: 1

Tart Base

  • 2 TBSP coconut flour
  • 1/2 TBSP almond meal
  • 1 TBSP coconut oil
  • dash of salt
  • 1 stevia packet

  • 20 g pitted dates
  • 1/2 TBSP coconut oil
  • 1/4 cup water

Apple Topping

  • 25 g peeled apple
  • 1 TBSP water
  • stevia
  • cinnamon

Preheat the oven to 350 F. Mix your tart base ingredients, then press it into a mini tart pan sprayed with nonstick spray and bake at 350 F for 5-7 mins until golden. Remove and let cool TEN MINUTES to set the crust. On a stove top, cook your pitted dates with coconut oil and water. Mash the dates while heating to get a creamy caramel sauce. You know it is finished once the water cooks off & the consistency is left smooth and creamy. Place this on top of the cooled tart/pie crust. Dice 25 g peeled apple & microwave it for 30 seconds with 1 tbsp water, a dash of stevia, & a dash of cinnamon. Drain off any excess water, then add the apples on top of the caramel in the tart crust. EEEAT.
