Blueberry Cheesecake Pancake Roll-Ups

I saw my friend Angela mention pancake roll-ups and I was like yes plz I’m down. So post workout I made blueberry cheesecake pancake roll-ups! Topped with Qia (a mix of chia seeds, hemp seeds, and raw buckwheat groats) . Yeahhh it was magical. How could it not be, with the magical blueberries and all ;p

Serves: 1

Pancake Base

  • 1/3 cup raw old fashioned rolled oats
  • 2 egg whites
  • 1 TBSP unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1 stevia packet

Cheesecake Icing

  • 1/3 cup fat free cottage cheese
  • 1 TBSP vanilla whey protein
  • 1/2 TBSP coconut flour
  • 1/2 tsp vanilla extract1 stevia packet

Toppings

  • 1/2 cup frozen blueberries
  • Qi’a (Optional)

First blend all of your pancake base ingredients together until even. Pour your batter in a large pan sprayed with nonstick spray. Cook over a medium heat for 2-3 mins per side. 

Make the cheesecake icing by using a handblender to blend 1/3 cup fat free cottage cheese, 1 tbsp vanilla whey protein, 1/2 tbsp coconut flour, 1/2 tsp vanilla extract, and 1 stevia packet until smooth. Spread all over your giant pancake. Roll up and cut into 4 pieces.

Top with blueberries and Qi’a (for crunch). I like to microwave half my blueberries and leave the other half frozen!
