I’m not the hugest fan of chia pudding but today I really wanted it and it hit the spot. Guess I never really made it perfectly until now. For breakfast I had vanilla lucuma chia pudding, kiwi, chocolate chia pudding, raw buckwheat groats, and more kiwi layered as a parfait.
- 3 TBSP chia seeds
- 3/4 cup unsweetened almond milk
- 1/2 tsp lucuma powder (Optional)
- 1 tsp vanilla extract
- 2 tsp unsweetened cocoa powder
- 1 stevia packet
Mix the chia seeds with the unsweetened almond milk and let sit in the fridge overnight. The chia seeds plump up to make the pudding. Then, in the morning, split the pudding two two separate bowls. In one bowl, add the lucuma powder and vanilla extract and mix. In the other bowl, add the cocoa powder and stevia packet and mix. Layer to make a parfait or just eat as is!
