Banana Nut Muffin Mugcake

Serves: 1

  • 1/2 cup raw old fashioned rolled oats
  • 1/2 banana (60 g)
  • 1 TBSP coconut flour
  • 2 egg whites
  • 1/2 tsp vanilla extract
  • 1/4 tsp banana extract (Optional)
  • 1/4 tsp cinnamon
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 1/2 Banana Nut Quest Bar (Optional)

Grind the oats into a flour. Then add a QUARTER of the banana (save 1/4!) and the remaining ingredients except for the quest bar. Blend again. Slice the other 1/4 banana into chunks and swirl into the batter. Then break up 1/2 banana nut quest bar and swirl inside the batter. Optional, but recommended. If not, use 1 TBSP chopped pecans. Pour the batter into a bowl sprayed with nonstick spray. Microwave 1:45-2:15 minutes. Then flip onto a plate and top with what you want!

For my mugcake, I made a maple cream by mixing 1/4 cup plain Greek yogurt, 1/2 TBSP unsweetened almond milk, 1/4 tsp maple extract, and 1 stevia packet.
