Postworkout dinner never tasted so fancy :) I’m liking the combo of fruit and meat lately. Woop. Quick dinner, too. Takes me 20 minutes.
- 4-5 oz flounder
- 3 oz frozen brussel sprouts (5 large brussels or 10-11 smaller brussels)
- 1/4 cup frozen edamame
- 1/4 cup chopped onion
- 1 black plum
- 1.5 TBSP balsamic vinegar
- 3/4 tsp basil
- black pepper to taste
Preheat the oven to 375F. Place the flounder on a baking sheet sprayed with a nonstick spray. Microwave the brussel sprouts for 90 seconds, and cut in half. Microwave the edamame for 30 seconds. Chop the onion and plum. Nowwww.. toss all of that on top of the flounder on the baking sheet. Drizzle on the balsamic vinegar, basil, and black pepper to taste. BAke at 375F for 15 minutes. And it’s done!
