For breakfast today I made a batch of bacon pancake muffins! Topped with maple pancake coconut butter (Sweet Spreads brand) yummm. No time to sit around flippin pancakes! Bake em instead! While you run around like a headless chicken getting ready for the morning so you’re not late and lose your job and be sad and cry. All for what? Pancakes? Was it worth it? #hm? (Actually probably yes but that’s not the point)

- 2 pieces turkey bacon
First, make your pancake batter. Then cook 2 pieces of turkey bacon. Chop the bacon and stir it into the batter. Pour into the molds of a sprayed/greased cupcake tray. Bake at 350F for 12-15 minutes. It’s done if a toothpick comes out clean when you poke em!
