Apple Pie Protein Roll-Up

Oh my, I expected this to be good but it was UNBELIEVABLE. This is an apple pie protein roll up with a maple peanut butter cookie dough icing inside, topped with a cranberry “jam”. All of the flavors and textures were spot on together.

Serves: 1

Roll-Up Base

  •  3 egg whites
  • 1 TBSP coconut flour
  • 1 TBSP vanilla whey protein
  • 1 TBSP unsweetened applesauce
  • 1/4 tsp apple pie spice
  • 1/2 tsp vanilla extract
  • 1/2 tsp caramel extract (or more vanilla)
  • 1/2 tsp baking powder
  • 1 stevia packet
  • 2 TBSP finely diced apple

Maple Peanut Butter Cookie Dough Icing

  • 1/4 cup lowfat cottage cheese
  • 1.5 TBSP peanut butter cookie dough whey protein (myofusion brand)
  • 1/8 tsp maple extract
  • 8-10 liquid stevia drops

Cranberry “Jam”

  • 1/2 cup cranberries
  • 12-15 liquid stevia drops

Begin by making your roll-up base. Blend all of the ingredients except for the diced apple. Then, stir in the apple into the batter. Spray a large pan with nonstick spray and pour all of your batter in. Cook on a medium/high heat for 3-4 minutes, flip, and cook another 2 minutes.

Make the icing by using a handblender to blnd the 4 listed ingredients. Spread on your roll-up base anddd… roll up!

Finally, make your cranberry jam to top it off. Microwave your cranberries for 1 minutes. Mash it with the stevia drops and microwave another 30 seconds. Mash again. Put on top of your roll ups.

Slice into 4 rolls and serve.
