Apple Pie Mugcake

Spiralizin spiralizin all my foooood with my new spiralizer. My days: spiralized food, waffles, and kabocha. I made a delicious apple pie mugcake using spiralized apples. Complete with a maple spice icing. Chopped apples are perfectly fine but…why not! It’s fun.

Serves: 1

Mugcake Base

  • 1/2 cup old fashioned rolled oats
  • 1/2 cup liquid egg whites (or 3 egg whites)
  • 1 TBSP unsweetened applesauce
  • 3 TBSP plain Greek yogurt
  • 1 TBSP coconut flour
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp apple pie spice
  • 1 stevia packet
  • 1/4 cup shredded apple

Maple Spice Icing

  • 1/4 cup plain greek yogurt
  • 1 TBSP sugar free syrup
  • 1/8 tsp apple pie spice
  • 1 stevia packet

First, grind your oats into a flour. Then add the remaining mugcake ingredients except for the apple and blend again. Swirl apple into your batter. Then, pour the batter into a bowl sprayed with nonstick spray. Microwave for 2:45-3:15 minutes. Flip onto a plate and let cool.

Make your maple spice icing by mixing the four listed ingredients. Add on top of your mugcake. Add more shredded apple if desired.
