What do you do for fun, Kim? Oh you know… Decorate food. Then eat it all into absolute nothingness. Gets crazy. Apple pie french toast topped with a toffee peanut butter cream, a healthy chocolate sauce, cocoa almond Square bars, buckwheat groats for crunchies, cinnamon roll wink desserts ice cream, blueberries, and sliced kiwi. My definition of sunday funday after a shoulder workout mmkayyy.
Serves: 1
- 2 egg whites
- 2 TBSP unsweetened almond milk
- 1/2 tsp apple pie spice
- 1 stevia packet
- 2 slices of Nature’s Own 40 cal/slice bread (or bread of choice)
Whisk together the egg whites, almond milk, apple pie spice, and stevia. Let your bread soak in the mixture for 2-3 minutes per side so it gets nice and soggy! I use this bread for french toast because this kind soaks up the egg white mixture a lottttt. So it gets fluffy when it cooks. Others can be too dense. Spray a pan with nonstick spray and cook on a medium/low heat for 3-4 minutes per side, or until the egg whites are cooked and it’s slightly browned on each side.
For the peanut butter toffee cream, mix 2 TBSP plain greek yogurt, 2 TBSP peanut flour, 8-10 English toffee sweetleafstevia drops, and water to desired consistency.
For the chocolate sauce, mix 1 TBSP unsweetened cocoa powder, 2 stevia packets, and water to desired consistency.
